Puerh and heicha - novelties
The main representative of the diverse group of teas called Hei Cha is Puerh tea. Dark Shu puerh, is faster fermented in a controlled process during the processing of the leaves. The light puerh, Sheng, is aged very slowly through a long post-fermentation phase that can take decades. Light puerhs are now commonly drunk young, still green, and the way the leaves are processed is partly adapted to this trend.
