High mountain teas from Lishan are considered to be some of the best in all of Taiwan. The area is located in the central part of the island at an altitude of 1500 to 2000 meters above sea level. The annual average temperature here is below twenty degrees, and winter frosts are no exception. Tea plants grow very slowly in such conditions and are therefore harvested less often than in other areas. This particular tea was harvested at an altitude of 1800 m. Light golden green in a cup with a quite heavy heady aroma full of exotic flowers, Orchidea scent, and local Lilly-in-the-valley.
How to brew Li Shan tea
Use 5 grams of tea leaves for 0.5 litre of boiling water cooled to 85-90 °C, steep for 2–3 minutes. Feel free to experiment with steeping time, water temperature, and the amount of tea leaves. These tea leaves are also suitable for Asian-style preparation, which includes multiple infusions: you steep 5 grams of tea leaves per 150 ml of water that has boiled and cooled to 85–90 °C for 30 seconds and in the following three infusions, you steep the leaves for 40, 60, and 90 seconds, respectively.
